3 Quick Dinners From the Grill

Next time you’re scrambling to get dinner on the table at the end of the day, take it outside! Fire up the grill and you can get these grill-icious meals on the table in minutes.

Grilled New York Strip Steak with Blue Cheese Butter

Serves 4

Serve with microwave-baked potatoes for a fast and filling meal.

Ingredients:

  • 4 New York strip steaks, about 1-inch thick.
  • salt and pepper.
  • 2 tablespoons unsalted butter.
  • 2 tablespoons crumbled blue cheese.

Directions:

  1. Preheat grill.
  2. Season steaks on both sides with salt and pepper.
  3. Grill steaks on lightly-oiled grill rack, about 5 minutes per side for medium rare.
  4. While steaks cook, combine butter and blue cheese in a small bowl, pressing with a fork or wooden spoon until it’s smooth.
  5. Remove steaks from grill and let rest for 10 minutes before slicing.
  6. Top each steak with a dollop of the blue cheese butter and serve.

Grilled Hoisin Turkey Burgers with Hoisin Mayo

Serves 4

Serve with your favorite salad and dinner is served in a flash!

Ingredients:

  • 20 ounces ground turkey.
  • 2 tablespoons hoisin sauce.
  • 1/4 teaspoon garlic powder.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon ground black pepper.
  • 4 hamburger buns or sandwich rolls.
  • 1/2 cup spinach leaves, rinsed and patted dry.
  • 1 tablespoon hoisin sauce.
  • 2 tablespoons mayonnaise.

Directions:

  1. Preheat grill and lightly oil grill rack.
  2. Combine turkey, 2 tablespoons hoisin sauce, garlic powder, salt and pepper in a large bowl and stir until well-mixed.
  3. Divide turkey into four patties and grill over medium high heat until internal temperature reaches 165 degrees Fahrenheit, about 5 minutes per side.
  4. While burgers cook, stir hoisin sauce and mayonnaise together in a small bowl.
  5. Line the bottom half of each bun with spinach leaves. Top with a burger, a dollop of the hoisin mayo, the top half of the buns and serve.

Grilled Salmon with Peach Salsa

Serves 4

Serve with a bag of steam-in-the-bag green beans for a healthy dinner on the fly.

Ingredients:

  • 4, 6-ounce salmon fillets.
  • 2 teaspoons olive oil.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon ground black pepper.
  • 1 cup peach salsa (like Newman’s Own Chunky Peach).

Directions:

  1. Prepare grill and lightly oil grill rack.
  2.  Brush salmon with olive oil and season with salt and pepper.
  3.  Grill salmon, skin side down, about 5 minutes per side.
  4. Remove salmon from grill and arrange on a plate or platter.
  5. Top with salsa and serve.
