Blueberry Flax Bran Muffins Recipe

Give your morning blueberry muffins a boost of nutrition with flax, brown rice flour and soy milk. This Blueberry Flax Bran Muffin recipe is a healthy spin on traditional blueberry muffins.


  • 1/2 cup brown rice flour
  • 1/2 cup flax meal
  • 1/3 cup of oat bran
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/3 cup soy milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup of agave syrup
  • 1 cup blueberries


  1. Preheat oven to 350 degrees.
  2. Combine first 6 ingredients in a mixing bowl, set aside.
  3. Combine next 4 ingredients in a small bowl and mix well; add to the dry ingredients, stir well and then stir in blueberries
  4. Bake in muffin pan lined with baking cups for 25 minutes.
