Step by Step; With the ingredients.. Cannellini (White Bean) Bruschetta Recipe
Ingredients
- 1, 14-ounce can cannellini beans, drained (white kidney beans)
- 4 cloves of roasted garlic or 2 teaspoons of jarred, roasted garlic paste
- 2 tablespoons minced parsley
- 1 teaspoon lemon juice
- 3 tablespoons olive oil
- 1 to 2 tablespoons of water to adjust consistency
- Salt and pepper to taste
- 1 baguette, sliced on the diagonal, lightly toasted on both sides
- 15 basil leaves, thinly sliced for garnish
Directions
- Combine the first seven ingredients in a blender or mini food processor starting with 1 tablespoon of water and adding more as necessary to make a smooth paste.
- Place a desired amount of cannellini mixture on each baguette slice and garnish with a few pieces of basil.
- Serve at room temperature.
