  • 1, 14-ounce can cannellini beans, drained (white kidney beans)
  • 4 cloves of roasted garlic or 2 teaspoons of jarred, roasted garlic paste
  • 2 tablespoons minced parsley
  • 1 teaspoon lemon juice
  • 3 tablespoons olive oil
  • 1 to 2 tablespoons of water to adjust consistency
  • Salt and pepper to taste
  • 1 baguette, sliced on the diagonal, lightly toasted on both sides
  • 15 basil leaves, thinly sliced for garnish


  1. Combine the first seven ingredients in a blender or mini food processor starting with 1 tablespoon of water and adding more as necessary to make a smooth paste.
  2. Place a desired amount of cannellini mixture on each baguette slice and garnish with a few pieces of basil.
  3. Serve at room temperature.
