This is the most efficient way to cook lobster. Add about 2 inches of water to a large pot and bring to a boil. Drop in the lobsters, careful to avoid overcrowding. Cover and steam until cooked through.
It will take about 10 minutes for the first pound of lobster, and roughly two minutes more for each additional 1/4 pound.
Fill a large stockpot with salted water about halfway. Bring to a boil and drop the lobsters in claws first. Cover and boil until the lobsters are bright red. A 1 1/4 pound lobster will take about 10 minutes. A 2 pound lobster will take about 15 to 16 minutes.
Let cool slightly before serving. It’s also a good idea to cut the tips of the claws off and drain out excess water before plating.
You will need to cook the lobsters twice if you want to grill them. First, parboil the lobsters in boiling water for two minutes and let them cool completely. Remove the claws and tail from the lobster and discard the body.
To grill, slice open the tail and crack open the claws. Place on a hot grill, shell side down, and cook for 15 minutes. If desired, the meat may be brushed with butter before grilling.
Cooked lobsters are fabulous served with clarified butter, which is melted butter that has had the foaminess spooned off.
